Often, all you need to do to surprise and delight your taste buds is alter an everyday dish with one out-of-the-norm spice. Take these easy-to-make scones, for example. Instead of using the ordinary cinnamon sitting in my cabinet, I decided instead to make them with a spice from the same species: canella, which comes from the bark of a tropical tree.

Canella bark is softer than cinnamon sticks and can be ground easily with a mortar and pestle. Yes, cinnamon and canella are from the same species and thus similar in flavor, but canella, often called “white cinnamon,” is much more aromatic—and that subtlety can give a recipe a different nuance.

I don’t mean to say that I don’t like cinnamon. I do—but I love experimenting with flavors and ingredients. In this case, as the scones cooked, my kitchen didn’t have that pungent cinnamon smell swirling around, rather the scent was lighter, hardly noticeable. And, upon taking my first taste of my scones, I recognized that the canella flavor was oh-so-slightly more delicate than cinnamon: —making these scones a definite new accompaniment to my morning latte.

Canella Scones
2 cups flour
¼ cup sugar
3 teaspoons baking powder
½ teaspoon salt
2 teaspoons canella
½ teaspoon maple extract

Preheat oven to 400 degrees. Grease a cookie sheet. By hand, mix together flour, sugar, baking powder, salt, and ground canella. Pour in whipping cream. Mix by hand, until combined. The mix will be sticky. Flour counter or cutting board. Pat dough into two rounds, each approximately four inches. Then, cut each section into quarters, then eighths. Place on greased cookie sheet and bake for 10 minutes. Let cool five minutes, then glaze.

Glaze
1 cup powdered sugar
½ teaspoon vanilla
¼ teaspoon maple extract
½ teaspoon ground canella
2 tablespoons milk

Mix all ingredients together. Add more milk or sugar to achieve desired consistency. Drizzle over warm scones.  Enjoy!
