Now that I am a mom, sleep is a hot commodity. So this Mother’s Day, what I would love is an extra hour in bed. I don’t want jewelry or flowers. All I want is a little extra rest. And what would take this extra hour in bed up several notches? Being served breakfast while I recline—true decadence for any busy mom.
One of my favorite breakfasts doesn’t actually require cooking; it does require some detailed shopping, however. I love nibbling on a platter full of a variety of my favorite foods as I sip tea and read a book or the newspaper. I call this abundant platter the “Lazy Sunday Breakfast”—it’s a dish carried over from my single life that made its way into my very busy married-with-child life, but the name stuck. It’s best served with a large pot of tea (and honey) from Mariage Frères: specifically the Eros blend, which contains black tea from China that’s sprinkled with hibiscus and mallow flowers—and okay, perhaps a glass of sparkling wine, too, to ring in Mother’s Day.
The Lazy Sunday Breakfast includes varying amounts of the following, served on one large plate:
• Fresh dates and Manchego cheese
• Smoked salmon on a toasted bagel with: red onion, cornichons, crème fraiche and capers
• Prosciutto and buffalo mozzarella, drizzled with balsamic vinegar
• Olives
• Goat cheese with fig jam and baguette slices
• Arugula with olive oil and balsamic vinegar
• Fresh strawberries, raspberries and blueberries
This “breakfast” of savory and sweet treats is so filling it can lean into lunch and even last all day. And it’s perfect for sharing. Add what you like and create your own version of the “Lazy Sunday Breakfast” to enjoy, even if the days of lazing around are far behind you.
